It’s about years of dedication, patience, and persistence in a craft where shortcuts are impossible. A brisket takes as long as it takes. Wood burns the way it wants to burn. And the customer line doesn’t care if you’re tired, short-staffed, or working through a supply chain nightmare.

The truth is, every name on a list represents thousands of invisible hours.
